Dorito Taco Salad


It's been a couple days since I've written so I decided to share one of my absolute favorite recipes you.  It's simple and delicious.  My family loves Mexican food and yet it's something we rarely have at home.  This recipe is perfect for a small family or even a large get together because you can adjust it so easily.  My two year old even likes this taco salad and that's saying something. Get ready cause once you try this recipe, you will be making it on a regular basis! Here we go:
Dorito Taco Salad
  • 1 lb of ground beef (no less than 80/20)
  • 1 family size bag of Doritos
  • 1 can of refried beans (the cheap kind works just as well)
  • 14oz of any kind of salsa (I use the cheap mild kind)
  • Salsa for topping 
  • Shredded Mexican blend cheese
  • Shredded lettuce 
  • Chopped onion
  • Diced tomatoes
Let's get cooking!
  1. Step 1: Brown your hamburger (about 6 mins).  Drain the grease.  Add the refried beans and salsa. (If sauce looks really thick, add about 1/2 cup of water).  Also, it will thin down some while cooking. Turn down heat and let it simmer for about 30 min.
  2. Step 2: Chop up your onion, tomatoes, and set out your Doritos, cheese, lettuce, and salsa.
  3. Step 3: Now layer your plate! Crumble Doritos up on the bottom, add cheese (it melts if you put it on top of the Doritos), add meat mixture, and then add whatever toppings you like! Enjoy!
This is such a simple meal but it is so filling and absolutely delicious.  You could also add whatever other toppings you like (red beans, extra cheese, etc) or you could even use regular tortilla chips.  This recipe has endless possibilities. You could change it up each time!

Who Doesn't Like Spaghetti?!






 
Today is Day One of my cooking blog and I'm so excited to get started! If you're like me, you search and search for recipes to cook for your family, something different. It gets so boring cooking the same old thing from week to week so I've decided to change that. :) Throughout this duration of this blog I will be cooking recipes that I have cooked in my own kitchen and loved. I also have a two year old little boy and his tastes are quite picky. The recipes I will share will be from numerous places but with a little personalization and trial and error to make them healthier and more appealing to my little family. I hope you enjoy my blog as well as the recipes. Let's get started! Today I made spaghetti with homemade Italian meat sauce and trust me it's not as hard as it sounds and so worth it but it does need to simmer for at least 2 hrs so plan ahead. This recipe makes about 6 large servings.
